We Olive—a taste of California heritage
Since opening in 2003, We Olive
has built a reputation for quality,
California-produced olive oils and
balsamic vinegars. Owner Ruth
Mercurio and her staff take great
pride in sourcing high-quality
products, all with seal-certified
extra virgin olive oil (EVOO).
Seal-certified EVOO adheres
to strict guidelines including being
mechanically extracted without
the use of chemicals or excessive
heat, less than .5% free oleic acid
in the oil, and passing a blind test
taste to ensure positive taste ele-
ments and no defects. Seal-certified
provides quality assurance to both
the consumer and retailer that the
product is indeed 100% extra virgin
olive oil.
Customers find a wide range of
olive oils, vinegar, gourmet foods,
and gift items in the Paso Robles
store. The knowledgeable staff is
happy to help shoppers find items
for their kitchens, customize gift
baskets, corporate thank-you pack-
ages, or custom-labeling for special
occasions such as weddings.
The staff takes great pride in
sharing a passion for good food,
great olive oil, and superior culi-
nary items to delight We Olive’s
shoppers. “We strive to make
every customer feel welcome and
hope they are excited about their
purchases when they leave,” said
Mercurio.
Customers can take advantage
of We Olive‘s in-store refill pro-
gram. Once a bottle of olive oil or
vinegar is empty, bring the washed
bottle back to the store to be
refilled at a discounted rate. Each
refill is an opportunity to try any
oil or vinegar offered in the store.
The program is environmentally
friendly and economical, and re-
peat customers earn points towards
rewards with each purchase.
“We believe that the milestone
of turning 20 years old in 2023
inspires trust and longevity. We are
so honored to have the privilege of
bringing high-quality delicious ol-
ive oil into our customers’ kitchens
and yummy food into their bellies,”
adds Mercurio.
