Chef Andre, combining classic cooking with a modern twist
—To say that Executive Chef Andre Averseng enjoys cooking would be an understatement. The co-owner of Paso Terra restaurant with his wife Cristina, Chef Andre continues to create new and exciting dishes that exceed the expectations of diners from across the globe at their downtown location in Paso Robles.
“I am passionate about my cooking, even after 50-plus years of being in the business. I am all about taste and seasoning. I have learned over the years the right way to treat my food and bring the flavors to pop,” said Chef Andre.
“I like to experience and create new things. I don’t like to cook the same foods forever. Each time I create a new menu, there are certain items I feel really excited about. When people start to appreciate and love the flavor of the creation I came up with in my mind and with my hands, it confirms to me I am on the right path.

“I would say it’s Andre’s research and creativity that brings our restaurant to a high level,” Cristina said. “Andre is clearly the best seafood chef in SLO County and he loves the fact that the public appreciates his food and artistry. There is a lot of satisfaction in seeing the people happy, knowing that we made an impact on their lives. Both of us really love our customers and we love serving them and it is the same for our staff both in the back and front of the house. “
Even though Paso Terra is primarily a seafood restaurant, the menu also offers steak and a rack of lamb, as well as appetizers, salads, and desserts, (all gluten-free). The popular award-winning Paella is offered year-round. A weekly special, large diver scallop sauté with vodka caviar sauce has become one of the favored menu items, plus many more delightful dishes!
