Thomas Hill Organics Bistro for creative, organic cuisine
 Locally sourced, farm-to-table, delicious food and unique Central Coast wines
Thomas Hill Organics is a delightfully elegant restaurant in downtown Paso Robles, where visitors can enjoy a delicious menu of upscale cuisine. The restaurant was established in January 2009 by Debbie Thomas, who recently sold it to new owners Lisa and Mike Espy. The husband-and-wife team shares the roles of owners and chefs and is continuing the Thomas Hill Organics tradition of using local, farm-fresh ingredients in the food.
Being chefs, their mantra in the restaurant is: All that matters is the food. "We do not use corporate purveyors to get our products. Knowing where the food is grown or raised, how it is cared for once it comes into our kitchen and how it is presented to our guests is what matters most,” said Mike.
“We strive to make and bring our passion to each dish,” responds Lisa. “For example, our smoked salmon starts with a whole fish that we breakdown, smoke in-house and serve with pickled vegetables
which are sourced from Paso Robles, served with an aioli made with eggs from a local farm, creme fraiche made in-house and crostini baked from Back Porch Bakery bread."
Their produce is selected from local farms that use sustainable
or organic practices. Fish is fresh from local fisheries and providers. Meat and poultry are from local purveyors specializing in local, natural, grass-fed and free-range livestock. Bread comes exclusively from in-town artisan bakers.
Guests always come back
for more – not only because the service is friendly, informative, and the food is delicious – but the
relaxed, warm atmosphere beckons them to stay a while. Thomas Hill Organics is a must-try when you are in town, especially after a long day of wine tasting, sight-seeing and shopping. Expect to find good portions of classic dishes with a twist.
Thomas Hill Organics is a full- service, casual-fine dining restau- rant open for dining on the patio. The ambiance is upscale without the attitude, and the comfortable patio is used all year. They offer off-site catering for weddings and private parties. Reserve the private indoor dining room for a special occasion, rehearsal dinner, or busi- ness function.
Lisa and Mike are excited to be launching a new fall menu, hosting wine dinners monthly, and are thrilled to be opening the wine bar for extended hours. “Our wine bar is a great spot to taste local wines, whether it’s an exclusive bottle
not normally served by the glass or a delicious Sangria made with seasonal fruit,” said Lisa.
Tapas, not available in the restaurant, are served in the wine bar so feel free to pop in without a reservation for a bite to eat and a taste of a favorite local wine, while enjoying a unique setting in down- town Paso Robles.
Paso Robles is stunning in the fall, come on into Thomas Hill Organics and enjoy the season. The Espy’s said they are excited to be heading into the wine harvest months and fall is their favorite time of year.
